WHY THESE INGREDIENTS

A cookie is only as good as what goes into it. Here is every decision we made, and why.
  • Most protein cookies lean on a single isolate and a chalky aftertaste to prove they work. We use three sources because each does something the others cannot. Grass-fed whey concentrate for a complete amino acid profile. Micellar casein for a slower release and a softer, more tender crumb. Grass-fed bovine collagen for structure. Together they read as dessert, not supplement.

  • Allulose and monk fruit do the work that cane sugar usually does, without the sharp rise that follows. Allulose browns and caramelizes the way sugar does, which is why the edges taste baked rather than engineered. Monk fruit rounds it out. The result is sweetness that tastes like sweetness.

  • Organic almond butter, organic butter, and blanched almonds carry the richness. Fat is where flavor lives, and we did not cut it to chase a number. Organic eggs bind everything with a tenderness no substitute matches.

  • Our chocolate chips start with cacao beans and organic coconut sugar, finished with cocoa butter and real vanilla beans. Inulin adds fiber and body. This is chocolate chosen for taste first, which is the only reason to put chocolate in anything.

  • Blanched almonds, organic cocoa powder, and organic tapioca flour form the base. Almonds give body and a tender bite. Cocoa powder, processed with alkali, deepens the chocolate. Organic tapioca flour binds it without weighing it down. Organic vanilla extract, baking soda, and sea salt finish it. Salt is not an afterthought. It is what makes the rest taste like more.

  • No cane sugar. No seed oils. No protein isolates hiding behind artificial flavor. Nothing added to make the label look longer than the recipe.
